Bleach Zanpakutos

Zanpakutos are the main weapons of Death Gods. They are basically a katana is their first stage. However each sword has its own soul. The first stage of a Death god's weapon is a sealed stage in which the size of the Zanpakuto (also called a soul slicer or cutter) is based on the spirt power of the individual death god. After the initial training Death gods are taught how to release their own zanpakuto's power. The result is called a shikai (initial release). In this form the sword can actually change shape completely and gains great power. The Death god only needs to hear the name of his soul slicer and call it with a special command.
The final release called a bankai (third release). A death god normally can only preform this power when he has truly mastered his or her zanpakuto. The sword may become completely different than even its shikai form. At this level the sword fully empowers itself, shows it's true form and grants its user several additional powers.

Unohana Retsu
Shikai: Minatsuki Ability: Evaporates into a green mist and reforms into a giant fish. People swallowed by the fish are healed while in its stomach.

Shikai: Itegumo -Frozen Cloud Command: Dash!
Aizen Sōsuke
Shikai: Kyōka Suigetsu - Mirror Flower, Water Moon Command: Shatter! Ability: It is able to put anyone who sees it into a "complete hypnosis". Any time thereafter, Aizen can use this ability to create elaborate illusions that fool all five senses of anyone who has witnessed Kyōka Suigetu's activation in the past. This power has no effect on the blind. It also has the ability to create an illusionary mist in battle, and this ability is what Aizen initially claimed was its true power.
Hinamori Momo
Shikai: Tobiume - Flying Plum Blossoms Command: Snap! Ability: The blade straightens and produces several, Jitte-like prongs along its length. In this form, Tobiume can fire pink-colored energy bursts capable of cratering floors and holing walls.
Kuchiki Byakuya
Shikai: Senbonsakura - One Thousand Cherry Blossoms Command: Scatter! Ability: The blade dissolves into hundreds of sakura petals, which swarm around the target and cut him or her.
Bankai: Senbonsakura Kageyoshi - One Thousand Cherry Blossoms Brutal Shadows --> Hakuteiken (White Imperial Sword)

Bankai: Daiguren Hyōrinmaru - Ice Ring of the Great Frozen Hell Ability: Enables Tōshirō to exercise control over the weather, specifically wind and ice.

Zaraki Kenpachi
He seems to still not know the name of his zanpakuto. Hence, he does not have a shikai nor a bankai.
Arrancar Zanpakutos
Arrancars, as having gained some powers of a shinigami, can weild Zanpakutos. Their Zanpakutos, however, are not weapons in the sense we were used due to the shinigamis. Their Zanpakutos in their realease state let them to recover some of the features they had when they were pure menos, gaining new powers. There is no classification of power (like shikai or bankai) like in the case of shinigamis.
